This Arugula beets salad is a typical winter salad. Normally, the quality of the roman salad and other green salad is not at his best during winter times. The production in green houses and plastic covered field is greatly responsible for this reality.
On the other hand, Aragula can normally be found fresh during winter. This salad does not rely of typical spring and summer vegetables like radish, tomatoes and cucumbers that we should normally avoid during the winter since they are mostly produced in green houses. Instead, it uses great winter vegetables like beets and carrots.

This salad, like most green salad has 4 main roles in a rejuvenating diet. First, it is a great source of antioxydants which prevent cancer and trigger the purification of the body. Fruits and vegetables like beet, carrots, citrus and apple work on the digestive system to clean it and optimize it. Then, garlic, olive oil and avocado clean the blood and rejuvenate our arteries. Finally, fish provides proteins and omega-3 to rebuild new tissus and solidify the body.
Don’t forget that the rejuvenation of the body happens in two phase: purification and regeneration. Without a source of protein, the rejuvenation of the body cannot be triggered in the long term.
Preparation time: 5-8 minutes
This recipe is for 1 person, multiply the ingredient for the number of people.
You will need the following ingredients :
- 1 cooked beet
- 2 cups of fresh arugula
- 1 apple (cortland or empire are good choices)
- Some slice of red onions
- 1 garlic clove
- 1 big organic carrot
- 1/2 fresh lemon
- 1/2 avocado
- 30ml first cold pressed olive oil
- about 100-150g of canned sockeye or pink salmon (half a typical can)
- 30ml dried cranberries
- 1/2 cup of chopped cucumbers
Instructions for arugula beets salad
- Wash arugula with fresh water.
- Put arugula in a large bowl.
- Chop the onion and the carrot in thin slices.
- Cut the apple and the beet in larger cubic pieces.
- Mash or chop the garlic in tinny pieces.
- Press the half lemon, save for last.
- Include all the chopped vegetables and the half avocado with arugula.
- Add lemon juice, olive oil and rinced fish.
- Blend well.
